Randy is working on perfecting his scratch biscuits. As his wife, it is my job to taste-test his work. My only problem is how to convince him that he needs to keep working on them...
We were Full-Time RVers who transitioned to Part-Time RVers, traveling across the USA with our pets to experience and share the best sights, sounds, and tastes of this country with our family and new friends.
A new service
The Hope Center is a local organization which aims to help people in practical ways. One of its programs is Block Party - a traveling service to give people access to food, counseling, jobs, health screenings, etc. They set up in one of four towns every other month. Randy decided to get involved with the food truck. He went a couple of times to get to know the people and setup, then on Saturday he was in charge of the truck.
It's a bit awkward to work in because in typical food truck fashion, it's crammed full of equipment with just a small area to move around in.Fortunately Randy's experience in the Snack Shack prepared him for this; the Snack Shack was even smaller!
So Randy put together a dish called Veggie Goulash (aka Shipwreck Dinner) while Scott filmed him, sending the video outside where hungry people waited.

Randy prepared a small portion for the demonstration but he had a large pan in the warming oven, ready for me to take out and serve. He did the demo and serving 3 times that morning, and everything went well. It's a nice way to serve our community.
