Smokin' Grouper

Recently when we were visiting Chad (one of Randy's scuba diving friends), he opened his freezer and gave us 6 big grouper heads. They are not pretty, but Chad said they have a lot of meat on them. OK...

Randy fired up his smoker with apple wood and put the grouper in for a few hours. 
Afterwards they were even less pretty
But Chad was right, there was a lot of delicious meat there - several pounds of it. 
Randy made some of it into a spread. And this is soooo good! Not at all "fishy" - it's smoky and meaty and slightly sweet - best sandwich spread ever.
